Crocco Winery

The quality of our wines comes from the quality of our land and from secrets handed down from generation to generation.

To get the more structured wines, we delay the harvest; or we carry out a drying in the vineyard, which will give a greater structure to the wine.
It will give an olfactory bouquet enriched by warm notes and hints of ripe fruit and jam.

We prepare long fermentations at controlled temperatures; musts do not accelerate any process, but fermentation is natural.

The quality of the vinification is not affected by the heat or the speed of fermentation. We make sure that we preserve the best scents, colour and all the typical characteristics of our vines – native or otherwise.
The processing mustn’t affect our wines too much. For us it’s essential that the cup reflects what Mother Nature has created.
We make a selection of everything which will go into our wine.
The attentive operator can remove a problem bunch or grain: we have very strict quality protocols, jealously guarded and applied by all our workers.

Native and international grape varieties

Primitivo

One of our most delicate native vines. That’s why our grandparents taught us the secrets of how to keep it over time.

Aglianico

Another very tannic native grape variety. The nature of our land preserves its authentic flavours and makes it much more delicate.

Merlot

An international grape variety, which blends perfectly with our clay soils and the hilly environment above sea level.

Cabernet e Sauvignon

A key vine for the production of the Moro di Matera DOC, which is blended with Primitivo and Merlot grapes.

Red wines

After fermentation, our wines will rest for 1 year in steel and, during this year, will be racked to remove lees.

After 1 year it goes
into the barrel and each type of red wine will have its own perfect ageing.

Rosé wines

After fermentation, our rosé wines will rest on the noble lees.
From time to time they will be stirred, so that the Lees give off even more vivid hints of the vine.

White wines

After fermentation, our white wines will rest on the noble lees, stirred periodically to release the hints of the grape variety.

We have a small amount of white wine, which undergoes a fermentation in new barriques for 8 months. Afterwards, it is bottled and left to stand for a few months before being sold.

A process which enhances the olfactory notes and gives an excellent structure to our wine.

"Human" organoleptic analysis of grapes

In the pre-harvest period of the grapes, we make samples and carry out “human” organoleptic Analyses. Our grandparents taught us great secrets to evaluate the quality and degree of maturation of our grapes.

We carry out tastings of grapes which require time and experience. We focus on tasting the core of the grape, because that’s what will show us whether the characteristics of the fruit reflect excellence, and whether the grapes are ready for harvest.

Even beyond the experience of our master winemakers, the analyses are also carried out and confirmed in a scientific way. With the use of advanced technologies, we monitor sugar and acid accumulations which preserve the scents, aromas and colours of our fine wines.

Brigà Rosé

Brigà Rosé

Harvest period: first week of September
Type of collection: manual.
Vinification: the grapes are brought to the cellar where they are destemmed, and send directly into a soft press, of which only 40% becomes the must; next comes a static clarification, lowering the temperature to 10° C for 8 hours; after 8 hours the clear product is separated from the murky and the fermentation starts at a controlled temperature
ABV: 13% Vol.
Colour: coral pink of a good colour intensity with gently purplish reflections.
Nose: very fruity with hints of strawberry and cherry
Taste: it is extremely balanced in structure and finesse; with a fresh acidity it gives a touch of love to the palate of those who taste it.
Gastronomic pairings: perfect as an aperitif, exceptional with seafood, it also excellently expresses itself in combination with fish-based first and second courses.
